Fig & Prosciutto Salad

Serves 4

6 fresh figs
6 prosciutto slices
14 oz | 1 1/2 cups fresh mozzarella, drained
1 large bunch purple basil, leaves only, washed
3 oz | 3/4 cup unsalted pistachios, shelled and roughly chopped
2 - 3 tbsp balsamic vinegar

Cut a criss-cross pattern into the top of the figs.

Arrange on a serving plate with the prosciutto slices folded in and around the figs.

Arrange the mozzarella and basil around the plate. Sprinkle the pistachios on top and drizzle with balsamic vinegar before serving.
